Ingredients
- 5 eggs, separated
- pinch of salt
- 1 1/4 (250 grams) cup sugar
- 1/4 cup melted butter (you can also use vegetable oil)
- 1 vanilla bean
- 1 2/3 cup (200 grams) all purpose flour
- 1 tsp baking powder
- 1/4 cup cocoa powder
- 3 tbsp water
- 1-2 oz dark and white chocolate (optional, for topping)
Instructions
- Heat the oven to 375F.
- In a clean, grease-free mixing bowl whisk the egg whites (on medium speed) with a pinch of salt until soft peaks form.
- Gently fold in the sugar and keep whisking until firm peaks form.
- Scrape the seeds from the vanilla bean.
- In a small bowl mix the egg yolks with the melted butter and vanilla seeds. With a spatula gently fold in the egg yolks into the egg whites.
- Slowly, making sure you don’t deflate the egg whites fold in the flour and baking powder.
- In a small bowl combine to cocoa powder with the water until smooth.
- Optional you can separate the batter in 2. In one half stir in the chocolate.
- For a quicker version fold in the chocolate into the entire batter gently folding and marbling it.
- Pour the batter into a greased loaf pan. With a skewer make some swirls if you want.
- Bake the cake in preheated oven for 50 minutes.
- Once the cake is baked, leave it to cool slightly into the loaf pan before removing and cooling completely on a wire rack.
- When the loaf cake is cooled, melt both the dark and white chocolate and drizzle it over.
- Let set for few minutes before slicing it.
